Pork Chops with Sweet Potato and Apple Compote
Sweet potatoes are on our list of awesome Primal Foods. They are a wonderful root vegetable that is chock full of vitamin A and C which means Antioxidants! No shortage on healthy food that tastes great here.
I love this combination of the sweet potatos and apples. It's so satisfying and filling... and great for an after WOD meal ( for all you crossfitters and functional fitness athletes). I orginally found this idea on Robb Wolf's blog.
Here's What you Need:
1 lb pork chops or pork loin, seasoned with salt, pepper and thyme
1 large sweet potato, cut into 1/4 inch squares
2 medium green apples, cored and cut into 1/4 in squares
Olive oil, or preferred cooking fat
Cinnamon
Heat oven to 400.
In a square glass Pyrex dish, fill it with the sweet potatoes and apples. Sprinkle a bit of salt and drizzle with a little oil. Sprinkle with cinnamon. Cover with aluminum foil and bake for 30-45 min or until the sweet potatoes are soft. Make sure the sweet potato pieces and apples are uniform size or it will cook unevenly.
Heat the oil in a skillet to med-high. Sear the pork on each side, about 3-5 min each, or until it is brown and cooked through. Set aside or wait until the compote is almost done to cook.
Serve the pork on top of the filling. Enjoy!I know Oso wanted to partake...
