When eating primal I always am looking for alternatives to not so primal foods.
Exhibit A: The Tortilla
This fluffy circle of dough has been one of my favorite things since I can remember. It’s so versatile, you can put food on it, in it, around it… :) Plus we all know that wrapping up some food in a tortilla makes it handheld and easy to eat.
So what sort of thing can we use for a primal tortilla? I was at whole foods and I saw that all the Chard was on sale and I found this great Rainbow chard that was bright pink, so obviously I had to get it.
So here is a great recipe for chicken fajitas wrapped in a big-ass pink chard leaf. (Pink chard not required)![]()
What you need:
1 lb free range chicken tenders
1/2 large onion, minced
2 garlic cloves, minced
1 jalapeño, minced and de-seeded
1 cup chopped zucchini, small cubes
1 tbsp chili powder
salt to taste
olive oil, or other cooking oil/fat
3/4 cup free range chicken broth
cilantro, chopped
Large Chard leafs, washed and stems cut
Avocado, sliced
1) Dust the chicken tenders with chili powder and salt on both sides.
2) Heat oil in a large skillet on med heat.
3) Add in onions and sauté for 5-8 min until translucent
4) add in garlic and jalapeños, stir and saute for 2-3 min
5) add in zucchini and broth, bring to a boil, then turn heat down to low and simmer with the lid off until the liquid mixture has reduced to a thick sauce and nearly evaporated.
6) Lay out the chard leaf flat and start filling it with avocado, cilantro and the chicken mixture, not adding too much sauce… we don’t want a runny burrito
7) Wrap it all up ( see pictures below)
Step 1: Place ingredients in the center of the leaf.
Step 2: Pull one long side over and wrap tightly as shown
Step 3: pull the top end over as shown
Wrap it tight
Step 5: Finish rolling toward the rest of the leaf
Sometimes I like to use a toothpick to hold everything together. Another tip is if you mash the avocado around the leaf, it’s kind like glue that holds it together better.
Another alternative to this, would be to create a shell similar to that of manicotti. Since my grandmother is allergic to gluten we have been making these for years. Our recipe calls for rice flour. I'm sure you can substitute with your favorite gluten-free flour. This will definitely close a little bit better than the Chard Leaf. Just something to play with no?

ReplyDeleteThat is a great alternative. We try to stay completely grain free so the chard leaf was the best option I could think of. Thanks for the imput! Sometimes I like to use those rice papers that you soak in water. But those aren't really primal, but great for a gratitude meal.
